The drinks list

Wine, sake and drinks

A list built to sit beside raw fish and fire: crisp whites, low-intervention reds, chilled sake and cocktails from our own bar.

What we pour

Chosen for the food, not the label

Sushi and sashimi ask for acidity and precision, robata for something with a little more grip. Our wine list follows that logic — riesling, chablis and dry champagne alongside lighter reds that will not overpower the fish. Ask the floor and we will point you to the glass that fits your table.

Sake runs from clean, dry junmai served cold to fuller styles that sit well with grilled dishes. The bar mixes classics and its own signatures, with yuzu, shiso and Japanese spirits, and there is always a considered alcohol-free option.

On the list

Wine and champagne

By the glass and by the bottle, weighted towards cold-climate whites and vintage champagne kept in our chilled cabinet.

Sake

Served cold or warm depending on the style, poured by the glass so you can taste your way through the list.

Cocktails and zero proof

Signature cocktails from the bar plus non-alcoholic serves built with the same care.

FAQ

Drinks questions

Can we see the wine list in advance?
Yes — the current wine list and cocktail list are available as PDFs, and the floor team can talk you through the latest arrivals.
Do you offer wine pairings?
Yes. For tasting menus and private dinners we put together a pairing per course, wine or sake, agreed in advance.
Can we drink at the bar without eating?
Yes. The bar and lounge are open for drinks, with a short list of small plates if you get hungry.
Is there anything alcohol-free?
Always. Ask the bar for a zero-proof serve built around the same ingredients as our cocktails.
